Whirlybird Espresso
This lightly roasted Central American espresso is bright light lemon, mildly nutty like an Almond, and naturally caramel sweet in the milk with a very clean finish. This is our answer to a more modern roasting profile, yet losing the bite and dirty flavors that can come from a lighter, undeveloped roast. The natural sweetness is exactly what you want for your milk based drinks that are espresso heavy, such as the macchiato, cortado, cappuccino and flat white. We have discovered that Whirlybird works great as a lighter breakfast blend type regular coffee brew also. For a 3 Liter Airpot, we use 113g (4oz.) for our dose, ground a touch finer than our regular drip. For our Jazz fans, "Whirlybird" is a jazz tune written by Neal Hefti featured on the legendary Count Basie album, "The Atomic Mr. Basie" recorded in 1958.

AEROPRESS RECIPE:
For those using the Aeropress to brew, here is a recipe that yields delicious results! Please note the finer details, like the grind and water temp. Very important!
35g. Whirlybird, coarse grind, set up press in the inverted method.
Add 150g. 183F degree water and stir aggressively
Add the filter and lid at 30 seconds and press plunger until foam appears on top of the press.
Flip press at a minute and five seconds and immediately begin a 20 second press.
Add 170g. hot water to dilute.
One of the current ways we serve our home town of Topeka, KS includes promoting community and featuring local businesses through our Tasting Room Events we host in our roasting facility. We pair up a local food provider with lots and lots of our coffee. Our goal in these events is to bring a large group together to celebrate being together in person, and to enjoy excellent locally produced goods and flavors. Community Pour
Community Pour is a pop-up coffee experience we facilitate at our retail partner coffee-shop locations. 100% of proceeds will go toward a local charity chosen by our hosting shop. Our menu will consist of one non-customizable drink presentation, featuring extreme quality ingredients to create a unique one of a kind tasting experience. We will share flavors that may not make sense to offer on a regular menu, but just scream “try me”! Quality at its finest, showcasing local ingredient providers when possible, and the skills of the barista. Balanced flavors that aren’t masked by the overuse of sweeteners. All drinks will be served “dine-in” in ceramic or glass vessels to be enjoyed on premises. Meeting, greeting and deep conversations are highly encouraged! Trash Mountain Project exists to develop Christ-centered environments for children and families living in trash dump communities worldwide. When you purchase a bag of Blue Jazz Coffee from anywhere, you are also paying for a meal for a child in need at a trash dump community. In total, we have been able to provide over 200,000 meals through the program.
